Chicken-Apple Sausage Recipe

This chicken-apple sausage with cabbage and apples is sweet and savory in every bite. (A heads-up: Although we rarely eat anything processed, this Applegate sausage is considered minimally processed.)


We enjoyed it as a healthy, quick, and tasty weeknight dinner. We hope you do too!

Chicken-Apple Sausage with Cabbage and Apples 🍎  
Yields: 6 servings (We like leftovers for lunch the next day.)

Ingredients
  • 4 tbsp olive oil, divided
  • 2 packs of Applegate chicken-apple sausages, sliced diagonally into coins
  • 1 onion, diced
  • 1 Fuji apple, washed and diced with skin
  • 1 small to medium head of cabbage, thinly sliced
  • salt and pepper to taste
  • balsamic vinegar, about 2 tbsp or to taste
Directions
  1. Heat a large pan on medium heat. When it is hot, add 2 tbsp of olive oil. Once olive oil is hot, swirl it around in the pan so the whole bottom of the pan is covered. 
  2. Add sausage slices. I add them with tongs, starting at the outer rim of the pan and working my way to the center. Usually by the time I get to the center, the first slice that I placed in the pan should be ready to turn over. It should be browned like in the photo. Turn over all the sausage slices and brown on the other side for 2-3 minutes or until brown. Remove the sausage from the pan for later. Do not turn off the heat.
  3. Add the remaining 2 tbsp of olive oil. Let it heat for a minute, then add the onion and apple. Stir and saute until the onion starts to turn translucent and the apple is softening.
  4. Add cabbage, and salt and pepper to taste. Stir, and then cook for 5-7 minutes, stirring occasionally. Then place a lid over the cabbage/onion/apple mixture and turn heat to low or simmer for 5 minutes. The cabbage will become steamed and tender.
  5. Remove lid and drizzle about 2 tbsp of balsamic vinegar to the cabbage. Stir well, scraping up any browned bits from the bottom. Turn the heat back to medium. Cook for about 5 more minutes, stirring occasionally. By now the cabbage should be tender and slightly browned. 
  6. Add the sausage back to the pan with the cabbage, onion, and apple and stir, cooking for a minute or two. 
  7. Serve and enjoy!
